what's-in-the-kitchen-wednesday


i finally made something sweet and ohhh was it sweet and rich. 

it was memorial day and i wanted to bring an easy chilled dessert to morgan's family dinner later on that night. 'i have about three hours and my house is freakin' hot. what can i make?' is what i thought to myself for a good hour but then magically, pinterest came to my rescue with this simple recipe. it didn't require an oven, insane cooking tools, nor did it seem like i would make a massive mess in my kitchen. and after about an hour and a half, i had a sweet, chilled and creamy dessert with very little fuss. to me, that's pretty amazing. and can i just reiterate that there is no oven needed? that is my favorite part. no 350 degrees was going to make me sweat in my kitchen. hell no!

what's in it:
1.5 cups creamy peanut butter

8 ounces cream cheese

12 ounce can sweetened condensed milk

1 teaspoon vanilla

1 cup powdered sugar

1/4 cup whip cream

16 oreos, crushed (or you can use a whole package like i did. go big or go home?)

5 tablespoons melted butter

sea salt for sprinkling (totally optional)

in a large mixing bowl, combine both the peanut butter and cream cheese. 

beat peanut butter and cream cheese together until it's somewhat smooth yet somewhat clumpy. it will look more clumpy than anything and that's okay. it's just important that the cream cheese and peanut butter are combined evenly.

add sweetened condensed milk and vanilla and beat until smooth and creamy. add powdered sugar and beat until the mixture thickens slightly. if your mixture still feels too runny, don't fret. you can add some more peanut butter if you'd like but it will thicken in the refrigerator! speaking of refrigerators, chill this for about an hour or until ready to serve.

to make the oreo crushings (can i make this into a real word just for this post?), melt 5 tablespoons of butter and mix together with crushed oreos until the oreos are saturated and a little soggy. sounds really quite gross i know, but you'll regret thinking that later on.

once ready to serve, spoon a nice thick layer of oreo crushings into the bottom of cup. i used clear plastic ones because i think it makes the serving look a little prettier. spoon an even amount of peanut butter mixture on top of the oreo crushings. top with some more oreo crushings and a little sprinkle of sea salt if you want that sweet and salty combination. then serve your cute little individual servings of peanut butter pie.


sweet and easy. just how dessert should be!

ps. you could also try this with nutella. i might try this next time. just a thought.
